If you’re getting married in Thailand where fresh seafood can be found in abundance, it would be a shame to miss out on the chance to feast on the catch of the day. If you don’t want to serve plain pork, then consider adding a friendly dab of apple sauce to the top of the bite for an added touch of flavour.

The attraction of Thai spring rolls lies in their superb versatility. You can have them made with virtually any fresh produce you like and they are also great vegetarian or vegan guests. For a roll with real crunch and a kaleidoscope of wonderful colours, use cucumber strips, slices of mango, rice noodles, red cabbage and a red pepper. If you serve them alongside a delicious peanut dip, soy, chilli flakes and lime juice, you can almost guarantee that all of your guests – vegetarian or not – will not be able to resist a pre-dinner snack.

If you’re planning a longer interval between the wedding ceremony and the wedding meal, then you might want to serve your guests something a little more substantial than a snack to keep them going. Mini fish and chip cones might be naughty, but they’re the perfect treat for guests to pick on as they chat and socialize.
